This is a tasty and easy recipe using your home-grown tomatoes.
Time: 30 min or less
2 lg tomatoes – diced
1 bunch basil – stems removed; chopped
1 clove garlic – chopped
1 baguette – sliced and toast
1/4 cup balsamic vinegar
1/2 cup olive oil
Mix balsamic vinegar and a good olive oil in a small bowl.
Place diced tomatoes, garlic, and basil in the bowl with the vinegar and oil; lightly stir to coat.
Add salt and pepper to taste; place a spoonful of the mixture on top of bread. Serve hot or cold.
For more texture and interest, add some feta cheese or Kalamata olives!
